Yup, you can choose up to two textures per layer. And the program supports as many layers as you feel like, so you can get as many textures as you want.

If you have your color management set up completely with a CMYK output profile, set it to 'print simulation' and switch off 'Mark out of gamut colors', then you'll get the colors as they'll appear on paper. The default color selectors are still RGB though, so they will not limit you to the in-gamut colors (your selected colors will just be off when you paint with them), you have to use the CMYK (print) color selector for that, which isn't as fancy as the default ones, but it does take the output profile into account...
